Be not afraid! Today we have so many options. There are farmers markets springing up everywhere and there is barely a day when one of them isn’t in full swing with in a 20 to 30 minute drive. The fresher the produce is, the more flavorful the creation will be.
And here’s an added bonus to becoming a locatarian. You may have to park a few blocks away from a popular farmers market and walk not only to and fro, but you’ll also spend time walking around the market while sampling fresh fruits and veggies. For those more athletic types there are pull carts for bicycle riders to store their purchases in.
Here is one of my signature dishes that anyone can make at home. After all, summer is here and it’s time someone noticed just how slim, toned, well defined and healthy you look!
“THE PAINTED SUMMER SALAD”
Fresh Baby Greens with Blood Orange Dressing
Combination of baby kale, chard, wild arugula, taso (whatever else is available)
1 small blood orange
1 1/2 teaspoons white balsamic vinegar
2 segments of white or pink grapefruit
1 1/2 teaspoons low-fat Greek yogurt (any flavor or plain)
Pomegranate molasses (available in middle eastern markets)
Sumac (available in middle
In a small
bowl squeeze the juice from blood orange. Add a little orange zest, vinegar and whisk in olive oil.
Grab a dinner plate and smear the yogurt like a painter with a palate knife in a streak near edge of plate. Near opposite edge of plate make 3 drops of pomegranate molasses and run a toothpick across it to make a design. Sprinkle a little of the sumac on the yogurt, toss baby
lettuce with dressing and pile in middle of plate. Set your segments of grapefruit on open side of plate.
Get really creative and add veggie chips to the top for some crunch. and while you’re at the farmers market buy a nice piece of fresh salmon or halibut, season with salt and pepper and grill to your liking. You have just created a healthy, beautiful rock star meal that you can show off to friends along with the new healthy brass ring body you’re building!
